RECIPES FOR YOUR VALENTINE’S DINNER
CHAMPAGNE COCKTAIL
1 dash Angostura bitters
1 sugar cube
1 lemon
5 ounces chilled Champagne
Drop the dash of Angostura bitters onto a sugar cube and place in a Champagne flute. Cut a 6″ twist from a lemon and arrange inside a glass. Add chilled Champagne into the glass. Enjoy!
SCALLOPS WITH HERBED BROWN BUTTER
1 tablespoon olive oil
1 pound sea scallops
Salt, freshly ground pepper
2 tablespoons unsalted butter
4 sprigs of herbs (such as tarragon, lemon thyme, or sage)
2 teaspoons lemon juice
Heat oil in a skillet over medium-high heat. Season scallops with salt and pepper and cook until golden brown on 1 side for about 3 minutes. Turn scallops and add butter and herbs to pan. Continue cooking, spooning butter over scallops often, until scallops are cooked through and butter is brown and smells nutty, about 3 minutes longer. Add lemon juice. Serve scallops with brown butter pan sauce.
CLASSIC CHOCOLATE MOUSSE
3/4 cup chilled heavy cream
4 egg yolks, 2 egg whites
1/4 cup espresso or strong coffee, room temperature
1/8 teaspoon salt
3 tablespoons sugar
6 ounces semisweet chocolate
Beat 1/2 cup cream until stiff peaks form; cover and chill. Combine egg yolks, espresso, salt, and 2 tablespoons sugar in a large metal bowl. Set over a saucepan of simmering water. Cook, whisking constantly until mixture is doubled in volume with a temperature of 160°F.
Remove bowl from pan. Add chocolate; whisk until melted. Let stand, whisking occasionally, until room temperature. Beat egg whites with a mixer in another bowl until foamy. Add remaining sugar and beat until firm peaks form. Fold in egg whites then whipped cream into mixture just to blend.
Add mousse to 4-ounce ramekins. Chill until firm and whisk remaining 1/4 cup cream in a bowl until soft peaks form to serve over mousse.
