RECIPES FOR YOUR VALENTINE’S DINNER
\n CHAMPAGNE COCKTAIL<\/strong>
\n1 dash Angostura bitters
\n1 sugar cube
\n1 lemon
\n5 ounces chilled Champagne
\nDrop the dash of Angostura bitters onto a sugar cube and place in a Champagne flute. Cut a 6″ twist from a lemon and arrange inside a glass. Add chilled Champagne into the glass. Enjoy!<\/p>\n

SCALLOPS WITH HERBED BROWN BUTTER<\/strong>
\n1 tablespoon olive oil
\n1 pound sea scallops
\nSalt, freshly ground pepper
\n2 tablespoons unsalted butter
\n4 sprigs of herbs (such as tarragon, lemon thyme, or sage)
\n2 teaspoons lemon juice
\nHeat oil in a skillet over medium-high heat. Season scallops with salt and pepper and cook until golden brown on 1 side for about 3 minutes. Turn scallops and add butter and herbs to pan. Continue cooking, spooning butter over scallops often, until scallops are cooked through and butter is brown and smells nutty, about 3 minutes longer. Add lemon juice. Serve scallops with brown butter pan sauce.<\/p>\n

CLASSIC CHOCOLATE MOUSSE<\/strong>
\n3\/4 cup chilled heavy cream
\n4 egg yolks, 2 egg whites
\n1\/4 cup espresso or strong coffee, room temperature
\n1\/8 teaspoon salt
\n3 tablespoons sugar
\n6 ounces semisweet chocolate
\nBeat 1\/2 cup cream until stiff peaks form; cover and chill. Combine egg yolks, espresso, salt, and 2 tablespoons sugar in a large metal bowl. Set over a saucepan of simmering water. Cook, whisking constantly until mixture is doubled in volume with a temperature of 160°F.<\/p>\n

Remove bowl from pan. Add chocolate; whisk until melted. Let stand, whisking occasionally, until room temperature. Beat egg whites with a mixer in another bowl until foamy. Add remaining sugar and beat until firm peaks form. Fold in egg whites then whipped cream into mixture just to blend.<\/p>\n

Add mousse to 4-ounce ramekins. Chill until firm and whisk remaining 1\/4 cup cream in a bowl until soft peaks form to serve over mousse.<\/p>\n
